Food on the go? Here's a recipe for just that.

Getting enough nutrients and good food into us is key to leading a healthy lifestyle. All too often these days people are short of time and run to the nearest coffee shop for a muffin, a croissant or some other sugary treat that will curb their hunger.......Only issue is this doesn't stop you from feeling hungry again in another 30 minutes.

It might taste great at the time but the high sugar content makes our blood sugar level sky rocket. This leads to our body increasing the production of insulin to counteract the high blood sugar level resulting in what we call a "sugar crash". The consequent lower level of blood sugar after insulin has been secreted will make us feel tired, weak, lethargic and almost hungover.

The key to stopping this is hungover like state during the working day is preparing your own food which you can eat on the go when you're busy. Simple!

Here is a great recipe for some delicious Banana and Blueberry Oat Bars that you can eat in a hurry.

Ingredients

  • 125g Rolled Oats

  • 1 tbsp. Peanut Butter

  • 1 tbsp. Honey

  • 1 tbsp. Sunflower seeds

  • 20g Desiccated coconut

  • Dash of vanilla extract

  • 1 handful of blueberries

  • 1 Banana

What to do

  • Preheat your oven to 180 Celsius and line a baking dish with grease proof paper.

  • Mash the banana with the back of a fork and gently melt the peanut butter and honey together. Stir these into the banana mix and add in a dash of vanilla.

  • Combine all of the dry ingredients in a mixing bowl (apart from the blueberries) and pour over the honey and peanut butter. Mix well so that all of the oats are evenly coated and start to stick together.

  • Gently stir through the blueberries and pop the mixture into the baking dish, making sure to flatten everything down.

  • Cook these in the oven for around 15 minutes then leave to cool completely before slicing into bars

You can turn these into protein bars by adding a scoop of vanilla protein to the mixture before cooking. Seriously tasty!
